Managing partner Jacobo Turquie graduated from the American Culinary Institute in New York; restaurant manager Mario Ramirez hails from Mexico City’s renowned Le Moustache; and Chef Casiano Reyes came from Mexico City to oversee The Restaurant at Las Ventanas al Paraiso, one of the finest hotels in Latin America—their combined talents ensure that the cuisine and service at La Panga is always exceptional. Everything is fresh and expertly prepared. Fresh, farm-raised Oysters on the Half Shell are wonderfully soft and succulent. The Organic Field Greens Salad with grilled shrimp is an excellent small plate, especially at under $100 pesos. The shrimp are plump, both seasoned and cooked to perfection. The Yellow Fin Tartare with black beans and chives is an interesting combination that works well with the Shrimp Soup with prickly pear. The Cured Salmon Salad with Bliss potatoes and red onion vinaigrette is yet another wonderful creation. Mario Ramirez and his staff are attentive, impeccably groomed, and very pleasant.
